IngredientsFor the cereal:

  • 1 ½ C. Almond flour
  • ¼ tsp. Xanthan gum
  • 2 Tbsp. Unflavored protein powder
  • 2 tsp. Cinnamon
  • ½ tsp. Baking soda
  • Pinch of salt
  • ⅓ C. Swerve confectioner sugar substitute
  • 1 Egg
  • ½ tsp. Vanilla extract
  • 4 Tbsp. Butter softened

For the topping:

  • 1 Tbsp. Butter melted
  • 2 Tbsp. Swerve granulated sweetener
  • 1 tsp. Cinnamon

Instructions

  1. In a mixing bowl, combine the almond flour, xanthan gum, protein powder, baking soda, pinch of salt and 2 teaspoons of cinnamon. Mix to combine.
  2. Add 4 tablespoons of softened butter, ½ tsp of vanilla extract and an egg to the dry ingredients, and blend on high until it forms a dough.
  3. Wrap the dough and place it in the freezer for one hour.
  4. Preheat the oven to 350 degrees.
  5. Roll the dough out into a thin layer between two pieces of parchment paper.
  6. Cut the dough into squares with a pizza cutter or sharp knife.
