How to Make Keto Air Fryer Scotch Eggs
Fill a saucepan halfway with water, and bring to a boil over medium high heat.
Add six of the eggs to the boiling water, reduce the heat to medium low, and cook for exactly 6 minutes.
Remove the eggs, and immediately place into a bowl of ice water to stop the cooking process and cool.
Place the almond flour into one shallow bowl, and mix with the garlic powder.
Add the pork rind crumbs to a separate shallow bowl, and season with the chili powder as well as salt and pepper to taste.
Beat the remaining egg, and put into a bowl by itself.
Peel each of the boiled eggs.
Preheat the air fryer to 375 degrees.
Divide the sausage into six evenly pieces.
Flatten each piece of sausage between two pieces of parchment paper,
and then wrap the sausage around the eggs completely.
Roll the sausage-covered eggs in the almond flour,
dip in the egg
and then coat in the pork rind crumbs.
Place on a well greased pan or baking sheet.
Air fry the scotch eggs for 15 minutes, turning halfway through the cooking process.
