I used light brown sugar instead because that is all we had in house, but it’s still a very low sugar recipe at only 1/3 cup and it was so delicious. I ate half the loaf throughout the day. OMG! I don’t bake often so this was a real treat and a surprising source of protein.

This is delicious! Mine did not rise and pop like you was did. I did used room temperature eggs, Etc. Next time, I will use a more narrow or smaller loaf pan. Thank you so much for this recipe!

I added 1 cup zucchini because we had extra and used allulose instead of erythritol. I prefer it. I also used a long loaf pan instead of the short one. More than happy with 1/2 a serving at a time. This recipe is a keeper.
