Keto Copycat Krispy Kreme Donut Recipe
In a mixing bowl, combine almond flour, coconut flour, psyllium husk, xhantan gum and baking soda.
In a sauce pan, heat almond milk and butter. Once the butter is melted and the mixture is almost boiling, stir in Swerve. Stir until melted.
Remove from the heat and fold in the flour mixture.
Place the dough over a medium heat and cook for 3-5 minutes or until the dough is smooth and pulls away from the sides of a sauce pan.
Remove the dough from the heat and transfer into a bowl.
Let the dough cool for 15 minutes.
Preheat oven to 400F.
Whisk in the eggs, one at the time, followed by the vanilla extract.
Once you have a smooth dough you can use a spoon and make donut-holes place onto the baking sheet lined with parchment paper. Gently wet your fingers with water or grease with coconut oil to form a ball.
Bake the donut holes for 15 minutes. Reduce heat to 350F and continue baking for another 15 minutes. Turn off the oven and let the donut holes stand for 5 minutes.
In the meantime, make the sugar coating. Combine Erythrtiol and cinnamon in a plate.
Remove the donut holes from the oven.
Brush the donut holes with melted butter and roll through the mixture of sweetener and cinnamon. It is the best to do it while the donut holes are warm, as the sweetener and cinnamon will adhere better.
Serve warm or store left overs in air tight container
