How to make keto cinnamon roll casserole
Preheat the oven to 350 degrees.
In a microwave safe bowl, combine the mozzarella
and cream cheese, and microwave at 30 second intervals
until they are completely melted and combined.
Add the almond flour,
¼ cup Swerve sugar substitute
1 tablespoon cinnamon
and baking powder to the cheese mixture, and knead completely with your hands until completely combined.
Beat the egg into the dough mixture on high until thoroughly mixed, and place the dough into the freezer to chill for 30 minutes.
For the dough mixture into ball shapes, and place them on a parchment lined baking sheet.
Bake for 10-15 minutes until browned and cooked through. Let the cinnamon roll balls cool.
Break the cinnamon roll balls into 4 pieces each, and place the pieces into a well greased 9×9 baking dish.
Place the ingredients for the filling into a mixing bowl
and beat on high until frothy.
Pour the filling mixture over the top of the cinnamon roll bread in the baking dish, and bake for 25-30 minutes, or until browned and cooked through.
Sprinkle some confectioners sugar on top of the cooled casserole for garnish if desired
