How to Make Keto Low Carb Thai Baked Peanut Chicken
Preheat the oven to 375 degrees.
Place the chicken into a large mixing bowl.
Add the other ingredients with the exception of the lime slices,
chopped peanuts and green onions into the mixing bowl.
Mix together well to combine.
Marinate the chicken for 4 hours or more.
Place on a rack on a parchment lined baking sheet,
and bake for 35 minutes.
Garnish with green onions, lime slices and chopped peanuts before serving if desired.

- 5 Boneless skinless chicken thighs
- ¼ C. Natural peanut butter
- 1 Tbsp. Sugar free honey
- 1 C. Coconut milk unsweetened
- 3 tsp. Minced garlic
- 1 Tbsp. Rice wine vinegar
- 3 Tbsp. Soy sauce
- 1 Tbsp. Oyster sauce
- 2 tsp. Ginger paste
- 1 tsp. Sesame oil
- ¼ C. Chopped green onions
- Lime slices for garnish
- 2 Tbsp. Chopped peanuts
Instructions
- Preheat the oven to 375 degrees.
- Place the chicken into a large mixing bowl.
- Add the other ingredients with the exception of the lime slices, chopped peanuts and green onions into the mixing bowl. Mix together well to combine.
